How do
I take the back ground off where the symbols are?

Been a while since i took one apart, the silver trim is held in with torx (i think)
Then you'll need to remove the needles, very very brittle, i used a fork (what you'd eat with lol) to slide both sides then the curve of the fork with pressure on the handle should lift it evenly

Flip it over. Take the bolts out. Remove needles using the above fork method. It then unclips.

The background is printed on, by the way.

can you take the silver bit off without removing the dials??

The silver bit is part of the black surround you can see above the temp and fuel gauges. That is screwed on from the back, and clipped too.
