Gauge readings

I just bought a 95 valver last week with 70k on the clock so its pretty good mileage. I know nothing about the extra gauges and what they are meant to read. Could someone let me know what the oil gauges are meant to read when cold and when the engine is warm and is it common for the engine temp to go up to the 3/4ish mark when the car is running but not moving?What should i look out for too on the gauges as a sign of trouble?Any help would be very appreciated.

Left - Oil Level (only works on ignition)
Middle - Oil Temp
Right - Oil Pressure

Pressure should be about 3bar at 3.5kRPM or something.

Temp can vary greatly depending on oil used etc..
