I've just noticed a new noise. Its not horribly loud but its almost always there. Its most noticable when slowing down from 60mph to stop and sounds like a whirring/droning sound winding down. any thoughts?
What does a nackered wheel bearing sound like?

was it you that had your intake pipe pop off the other day aswell? First off, it may sound daft, but without knowing how much water there is its hard to tell so were you using the air con when you were driving? Air con causes condensation which on a hot day will somtimes amount to enough to give...
are you absolutely 1000% sure that its inside and not the heat shield above the exhausts? It might sound daft but so many people seem to have this issue.
Check the strut top in the boot and the rear speaker grills.

sorry to drag this up, but when you say sensor in the sump, do you mean remove the sump plug and put it in there somehow? does that mean that I'll need to put new oil in afterwards? also, at oil changes, the sump gets replaced, surely this means that the sensor should be replaced at the same time??
wowser you sound frightened! ;) Its not so much an issue of risk. If you want more noise you can go down the route of uprated panel filters/induction cones. Disconnecting the cold air feed is another way to go but as above, drilling a few holes in the DIRTY half of your airbox can give nice...
