I had a 600d for christmas and I'm in love with it :)

Best thing you can do is go into a store and have a play around with them IMO.

I don't know if the xxxD range has changed, but I never needed a 2nd battery when I had my 350D and have done entire days shooting with 5-600+ photos with my 5DII and there was still plenty of power left. Unless you won't be near a power socket for days, or need to film/ use live view for an entire day, then a spare battery really isn't needed.
DSLRs have very different power consumption to their compact counterparts.

Re the bundles, I'd avoid a holster bag, you'll only replace it with something else after a couple of months. The camera and lenses are good though.
