iPhone Backup Question....

I know the iPhone totally back's itself up to your computer when you plug it in, so plugging in a new iphone means you can have it back to how your one is in a matter of minutes, but what happens the other way around???

I have an iPhone full of stuff and I'm about to reboot my computer, I've moved everything of value onto an external HDD, but I don't want to plug my iPhone in after and it tell me it needs to wipe everything?!
