I have a stripped out Cup, with no airbags fitted and have the annoying Service/Airbag lights on. I know that resistors are an option, but also led to believe the Airbag Module can also be permanently turned off in the UCH using a Clip/RS tuner.

Get a pic of what you have. If it is as I think, there will be a resistor in one of the legs. I had some of those airbag delete looms and one leg had a resistor in, with a fuse as safety.
As below, upper leg has the resistor in-line.
Why did you think the MOT was going to run out in May, but it was really April? What was the score with the wheel bolts, were they there when you collected the car?

I bought my 172 Cup as a partially completed project. It had no back seats in. I can see the front seat looms, and have inserted resistors, however light remains on. I went looking - Very briefly, didn't find any loom.

Part number to cure Selector Oil leak, I fitted mine with the telephone help of Fred (cheers Fred!).
770 138 9670 - seal repair kit. £35. bit fiddly, as you have assemble it around the selector shaft after cutting the old seal off, then press it in and bingo!
